Title: Thumbprint Cookies - Glorious Liqueurs

2 1/4cFlour
1/4tsSalt
1cUnsalted butter, softened
1/2cSugar
2 Eggs, separated
2tsVanilla
1 1/2cVery finely chopped walnuts
  Or pecans
  Instant raspberry cordial
  Jam*

Preheat oven to 350F. Butter 2 cookie sheets.

Sift flour and salt; set aside.

Beat butter and sugar until very light; beat in egg yolks, then vanilla.

Reduce mixer speed to low, beat in flour, half at a time, to form a stiff dough.

Beat egg whites with a fork until foamy in a shallow dish. Place nuts in a second dish.

Form the dough, 1 1/2 teaspoons at a time, into small balls. Roll in egg whites, then in nuts, taking care to coat all over.

Place 2" apart on cookie sheets and for a hollow with fingertip.

Bake until very firm and golden, about 15 minutes. Remove to wire rack and cool completely. Fill hollows with jam.
